Spooky Halloween Superstitions

Halloween is on Sunday and a lot of you are preparing for trick or treaters and spooky Halloween parties. Halloween has never been one of my favorite holidays. But, I do decorate a little bit and we always have treats for the tick or treaters. Of course I make up goodie bags for our grandchildren too.
I thought this was the perfect opportunity to blog about superstitions. Yes, I am a little superstitious. If I spill salt I always toss a bit over my shoulder. Well both shoulders, better safe than sorry. During the Middle Ages salt was a very expensive commodity and was widely used for medicinal purposes. If you were to spill any salt, you were then to immediately throw it over your left shoulder to strike the nasty spirits in the eye, thus preventing sickness.
A few simple explanations for some popular superstitions:
Knocking on wood- Long ago it was believed that wood sprites lived in the wood (trees). When in need of some good luck, someone make a wish to a tree and then touched the bark, representing the first "knock." The second "knock" was to say "thank you." Knocking on the wood was often thought of as a source for protection. Did you know you are always supposed to knock from the bottom of the wood to top so you don’t knock the luck out?
Breaking a mirror- It was once believed that a person’s reflection in a mirror represented their soul. If you were to break that reflection, it would then be harmful to your soul.
Don’t’ walk under a ladder-Now I think this is just common sense. But, long ago the triangle was considered a symbol of life. Walking through any triangular shape (like a ladder leaning against a wall) was considered to be tempting one's fate.
Black cat crosses your path- In the Middle Ages; it was believed that black cats were witches companions. After seven years the cats turned into witches, devils or demons. No one wanted to cross paths with a witch or a demon.
Important note- did you notice that all of these superstitions started long ago? Curious why there are no new ones. You should be laughing by now.

Caramel Candy Apple Treats

Try these yummy candy apples this weekend. I added three recipes. Try one or try them all!* note instead of popsicle sticks try using chocolate and candy coated thick pretzel sticks.

Pistachio Chocolate Apples
1/2 cups semisweet chocolate chips
1 (1-oz) square unsweetened chocolate( coarsely chopped)
6 medium red eating apples such as (Gala, Empire, or Red Delicious)
6 flat wooden Popsicle sticks
1 bar (1.4 oz) chocolate-covered toffee candy (chopped)
3 Tbsp chopped pistachios
In heavy 1-quart saucepan over low heat or microwave-safe bowl in microwave oven, melt chocolate, stirring until smooth. Set aside. Place apples on a tray or plate. Remove stems if present and insert a stick into each through stem end. With teaspoon, spoon melted chocolate over each apple around the stick, letting excess drip down the apple. Sprinkle chocolate with toffee candy and pistachios. Refrigerate apples until chocolate is set.
Caramel Candied Apples
12 crisp apples (Gala, Empire, or Red Delicious)
1 1/3 cups dark corn syrup
1 1/3 cups granulated sugar
1 1/3 cups light brown sugar( packed)
1 1/3 cups heavy cream
1/4 tsp salt
3 Tbsp unsalted butter
3/4 tsp vanilla
Line a baking sheet with lightly oiled parchment paper. Push a popsicle stick halfway through the core of each apple. Combine the syrup, sugars, heavy cream, and salt in a large saucepan over medium-high heat. Simmer until the mixture reaches 240˚. Remove from the heat and whisk in the butter and vanilla. Let cool for 8 to 10 minutes, until caramel thickens to a toffee like consistency. Dip the apples into the caramel and place on the prepared baking sheet. Cool completely.
Caramel Apples
12 crisp apples (Gala, Empire, or Red Delicious)

1 1/3 cups heavy cream
1/4 tsp salt
3 Tbsp butter
3/4 tsp vanilla extract
Line a baking pan with a generously oiled sheet of parchment paper. Push a candy apple stick into the core of each apple. Combine the syrup, sugars, heavy cream, and salt in a large saucepan over medium-high heat. Simmer until the mixture reaches 270 ˚about 15 minutes. Remove from heat, stir in the butter and vanilla. Let cool for 6 to 8 minutes, until caramel thickens to a toffeelike consistency. Dip and gently swirl the apples into the caramel and place on the prepared baking sheet. Let cool completely.

Enjoy, and don't tell your dentist, giggle.

Chocolate Spiders


Easy to make chocolate spiders. A fun and yummy Halloween treat

What You Need:Chocolate-covered cream-filled snack cakes
Mini chocolate cream-filled snack cakes
Black licorice laces
M&M's
Chocolate and vanilla icing ( icing piping bag) or icing in the tube
Toothpicks

Let's Make them:

Use a toothpick to poke eight holes in cake, insert licorice laces into holes and trim ends to desired length.

Attach M&M's as eyes using dots of icing. Pipe dots of chocolate icing for pupils and create fangs by piping small bits of vanilla icing.
